Ingredients

Meatloaf
- 1 lb Ground Chicken
- 2 Cups Chopped Spinach
- 1 egg
- 3/4 Cup Mozzarella Cheese
- 1/2 Cup Parmesan Cheese
- 1/2 Small Onion
Sauce
- 1/4 Cup Sugar Reduced Ketchup
- 1 tsp Sriracha
- 2 tsp Soy Sauce
- 2 tbsp Sukrin Gold
- 1 tsp vinegar
- Sprinkle Garlic, optional
Instructions
- Preheat oven to 350
- Mix ground chicken, spinach, mozzarella, parmesan, egg, and onion in large bowl
- Spray large muffin pan with non stick spray or use silicon muffin pan
- Fill each cup halfway full with mixture
- In medium bowl, mix all sauce ingredients together
- Spoon over meatloaf cups leaving a little for serving
- Cook cups for 45-50 minutes or until cooked through
- Top with remaining sauce and serve hot
