The recipe I'm sharing today is a fun, keto spin on one of my favorites from my higher carb days. Chicken Parmesan.

Keto Chicken Parmesan Casserole

I love casseroles, especially at the end of a long day. There's something just so satisfying about throwing everything into a dish and popping it into the oven...even more satisfying when the result is delectable AND good for you!

This recipe has such yummy Italian flavors, and even includes one of Carolyn's bonus recipes for Cheaters Tomato Sauce, low carb goodness you can ONLY find in Easy Keto Dinners.

To make the recipe even quicker, Carolyn suggests using your favorite no-sugar-added marinara in place of the easy Cheater's Tomato Sauce, so don't worry if you haven't ordered your copy yet!

My go-to is usually Rao's Homemade Marinara Sauce (only 3 net carbs per ½ cup serving)!

Ingredients

  • 5 cups cubed cooked chicken, cooked
  • 1 cup no-sugar-added marinara sauce
  • ½ teaspoon red pepper flakes
  • 1 ounce Parmesan cheese, grated (about 1 cup)
  • 1 ½ cups shredded mozzarella cheese (about 6 ounces)
  • 1 ounce pork rinds, crushed
  • ½ teaspoon crushed dried basil

Instructions

  1. Preheat the oven to 350 F and lightly grease an 8-inch square baking pan
  2. Spread the chicken in the greased dish and pour the tomato sauce over it. Sprinkle with the red pepper flakes. Top with the Parmesan and then the mozzarella. Lightly sprinkle the rushed pork rinds and basil over the top.
  3. Bake for 25 minutes, until the cheese is melted and bubbly.

Notes

This recipe can be frozen either before baking or after, and it's easy to prep a day ahead. Just be sure to wrap it up tightly with foil before putting it in the freezer or fridge.

I am not necessarily doing Keto but I do use the Rau sauce and I was looking for a simple recipe! I added some fresh garlic while sautéing the chicken (love garlic) and I used pita chips on top instead of pork grinds! I did a small side of protein spaghetti and this was so delicious!!! Will definitely make this again!!

Great! I didn’t have pre-cooked chicken on hand, so I cubed raw chicken, coated with seasonings and sautéed in some avocado oil with garlic and finely diced onions. I added marinara and some Lakanto Golden, fresh basil and fresh spinach and topped with mozzarella and shredded Parm and covered the pan until the cheeses melted and it was ahhhhmazing served over zucchini noodles!
