I've always loved eating pinwheels. In fact, I think they're the first thing I ever "cooked" my husband back when we were dating.

I brought pinwheels to every potluck party and would mostly just eat what I brought.

My love for them is serious, y'all.

So I was really excited to make a replacement version that is low carb/keto friendly!

These are super duper easy to make and I don't even miss the tortilla in the slightest. I know some keto-ers are totally comfortable with low carb tortillas, and I'm also not opposed to that because:

  1. Who am I to judge ANYONE?
  2. If it's a low carb tortilla that's going to keep you from falling completely off the wagon and filling your life back up with carbs, I totally think you should do it.

BUT my pinwheels are not made with any form of tortilla. The meat takes their place 🙂

For my delectable treat, I used pepperoni AND genoa salami, pepper jack cheese (I love a little spice!), cream cheese, and pickles!

Trust me...the pickles add the perfect tang, and get some vegetable in there!

Cream Cheese & Salami Keto Pinwheels

Description

Low carb/Keto Cream cheese and salami pinwheels with pickles


Ingredients

Scale
  • 1 8oz block cream cheese
  • 8-10 thin slices of pepperoni and genoa salami *may need more depending on size
  • 4 tbsp. finely diced pickles

Instructions

  1. Bring cream cheese to room temperature and whip until fluffy
  2. Spread cream cheese in a ¼ inch thick rectangle in the center of a large piece of plastic wrap
  3. Spread pickles over cream cheese
  4. Place salami over cream cheese in overlapping layers so all cream cheese layer is covered
  5. Place a second piece of plastic wrap over salami layer and gently press down
  6. Flip entire rectangle over so bottom cream cheese layer is now facing the top
  7. Carefully peel back plastic wrap off top cream cheese layer
  8. Begin rolling into log shape slowly removing bottom layer of plastic wrap as you go
  9. Place pinwheel in tight plastic wrap and refrigerate at least 4 hours, overnight preferred
  10. Slice into preferred thickness

I make something similar to this except I use honey ham and pepperoni with spicy hot dill pickles and all I do is take the ham and lay it down, place a pepperoni or two on each slice of ham them I put the pickle on top of the cream cheese and just roll in and eat it like that. I definitely wanna try this recipe now though.

I left out the cream cheese all together in that last comment lol my bad. I put it on top of the ham and pepperoni once I lay them down and then place the pickle and then roll it and eat it that way. Not a pinwheel but it's amazing. I eat them constantly.

This rating is due to the recipe steps. You cannot peel any sticky substances off of wak or plastic paper... ever... so if the cheese you mention but do not include is supposed to be in this... it would be nice if this was added. Otherwise, the logic we have to know it will NOT come off the paper is bypassed by the hope that your list of steps will prove our logic wrong... what you get, is an irritated person that will hesitate to look at your recipes for fear of steps being missed and wasting food that can no longer be cut into pieces, but has to be weighed in servings because it's a blob of crap. Just saying... Thank you for the attempt. Obviously the ingredients are good, so even a mess is worth eating rather than wasting money on slop.

Amey, The directions do not mention wax paper, and I'm guessing that your wording of "plastic paper" may mean parchment paper, which again was not mentioned in the directions. I used plastic wrap (per the directions) and had no issues with peeling the plastic wrap off.

These sound so good! I'd have the deli slice pepper jack cheese thinly and layer the cheese slices in with the cream cheese.

Can’t wait to try these. I have same question as Gayle had asked regarding the pepper jack cheese you mentioned adding in your description before the recipe itself. There is no pepper jack listed in ingredients and wondering if that’s correct. Thanks
