I'll admit it, I'm an absolute Pizza super fan. Pizza was one of the absolute hardest things for me to give up since going Keto.

We used to eat it all. the. time.

It all started in our college dorm, which offered specialty pizzas made to order every Friday night. It was nothing short of magical, so it's something that my hubby and I have always connected over.

Fun fact: we even ordered a pizza to our hotel room on our wedding night!
I was so excited to learn about Fat Head Pizza because that stuff is seriously delicious. I've made it for my family countless times since cutting the carbs, but even though it's low, the carb count always kind of bothered me.
I mean, I think it's fine if you're a nibble on a slice and be full person, but I'm not that kind of girl.

I've been working on a new recipe to cut the carbs even less and I think I've got something you're going to love as much as I do.
This recipe calls for no almond flour, no coconut flour and no cauliflower. The secret to a yummy crust with only 1 TOTAL carb per serving?

Pork Rinds.

That's right. Pork Rind Flour, if you want to get technical. 🙂 All it is is crushed up pork rinds. And the craziest part is you can't even taste them.
I'm not really a sauce person so I only used a bit of olive oil under the toppings. The carbs are so low in this crust you have a bit of wiggle room if you do enjoy a little sugar free pizza sauce.

Description

Four ingredient low carb pizza crust made with pork rinds


Ingredients

Scale
  • 1 cup pork rinds, crushed
  • 1.5 cups cheddar cheese, shredded
  • 2 tbsp cream cheese, softened
  • 1 egg

Instructions

  1. Pulse pork rinds in blender or food processor until finely ground
  2. In microwaveable bowl, heat shredded cheddar and cream cheese until smooth ~45 seconds
  3. Mix cheeses together, add egg and stir. Work quickly, if cheese becomes stiff microwave for 10 sec
  4. Add pork rind flour and stir until combined
  5. Press dough out onto parchment covered baking sheet. ~¼ inch thick, or desired thickness
  6. Bake at 350 for 5 minutes
  7. Remove and top with desired toppings and bake for additional 10-15 minutes or until cheese is melted

I didn’t have high hopes for this, I’ll admit...but boy, was I wrong!! No pork rind flavor at all, and it had the perfect crust texture! I made HALF a recipe, a great size for one. I didn’t time it, I baked till the bottom was lightly browned, then flipped it to bake the other side, then I topped with a layer of pepperoni, mozzarella, crumbled sausage, crumbled bacon, & sautéed green peppers, then baked to melt the cheese. After that, I sprinkled a pinch of powdered parmesan & my fave Italian seasoning - McCormick grinder...No sauce, which I’ll continue bc it didn’t even need it! I loved this so much! Thank you, I will absolutely make this again & again!

OMG! Made this today. Amazing!! I used a large rectangular pan, rolled out thin just the way I like it. Topped with little Pizza sauce, shredded mozzarella, and fresh tomatoes and Basil from my garden. Amazing is an Understatement!! Truly Delicious. Weird of warning though, so good it's hard to now eat it all. I'm so full yet want more. Thank You so very much for this recipe!!! Sharing with my Keto / Low Carb Friends.

I am always looking for new and imaginative ways to eat keto and this one is truly a big winner!!! My crust came out soft, but reading thru all the comments, I have discovered ways to correct that in the future. Pizza is one of my most favorite foods and has always been my downfall. One question: the ingredients list says 1 cup of crushed pork rinds, but in the comments someone mentions 1 1/2 cups. Which is correct? I thank goodness for wonderful people like you who have the ingenuity and perseverance to come up with these fantastic recipes for those of us lacking these qualities. Thank you so much:)

I made 2 small crust, Baked them in our pellet grill. Froze one and made bruschetta on the other. So much better than fat head for that. Delish!
