This recipe is amazingly simple to make, completely delicious, and very, very filling. This is the absolute best Keto bread recipe I’ve ever tried, so I’m especially proud to share it on the blog.

These Keto dinner rolls can be eaten by themselves, or used as anything from hamburger buns to mini pizza crusts!

What really made the difference for me was the type of almond flour I used. I’ve tried so many different brands, but I’m so happy with my new favorite (King Arthur Almond Flour).

It has an amazing flavor, and consistent pricing with all of the other brands.

What really helps to make them so filling is the ground flax seed in the recipe. This stuff is full of fiber, and it gives the rolls a really nice all around flavor.

Ingredients

Scale

1 Cup Mozzarella, shredded

1 oz Cream Cheese

1 Cup Almond Flour

¼ Cup Ground Flax Seed

1 egg

½ Tsp Baking Soda


Instructions

Preheat oven to 400

Line baking sheet with parchment, set aside

In a medium bowl, melt cream cheese and mozzarella together (microwave ~1 min)

Stir cheeses together until smooth, add egg and stir until combined

In separate bowl combine almond flour, ground flax seed and baking soda

Mix cheese and egg mixture into dry ingredients and stir until dough forms soft ball (it will be sticky)

Using wet hands, gently roll dough into 6 balls

Roll tops in sesame seeds if desired and place onto lined baking sheet

Bake for 10-12 minutes until golden brown

Let cool for 15 minutes

Notes

Coconut flour is NOT a direct substitute for almond flour, you must adjust the amount

Dough will be sticky but should be able to form balls. Use wet hands to roll balls. If absolutely too wet to mold then add an additional tablespoon of almond flour until pliable

4 large rolls work great for sandwiches and burgers, 6 smaller is good for dinner rolls

I LOVE this recipe and so does my family. I add nutritional yeast and hemp hearts for added nutrition as well as sunflower seeds for added nutrition and texture----soooo yummy! On occasion I will add finely chopped sundried tomatoes, and/or fresh minced garlic, and/or finely chopped fresh rosemary

These were fantastic! I’m vegan keto so I used vegan cream cheese, mozzarella, and Just Egg substitute. It ended up needing more liquid so I added more Just Egg until sticky. Yes, they are dense and didn’t rise so not large but wow! I’m trying really hard to stick to eating just one. Thank you for the recipe!
