Keto Mason Jar Ice Cream - Vanilla, Chocolate and Strawberry

Everybody loves ice cream, and thanks to keto's popularity it's easier than ever to find keto-friendly ice cream options at your local grocery store.

But sometimes you want to save money or flex your creativity by making it yourself. You don't need an ice cream maker, or even a mixer to make a delicious, no-churn keto ice cream...All you need are a few simple ingredients, and a mason jar!

What ingredients do I need to make keto ice cream?

  • Heavy Whipping Cream
  • Powdered Erythritol (Swerve)
  • Vanilla Extract
  • Flavoring of Choice

The sky’s the limit when it comes to the flavors of low carb mason jar ice cream you can make! This post will show you how to make vanilla, chocolate, and strawberry, but you can experiment with different flavors and extracts to make everything from peanut butter to coffee to mint chocolate chip!

How do you make low carb ice cream in a mason jar?

Good news! It’s super simple!

  1. Pour the cream, powdered sweetener, vanilla and flavoring of choice into a 16 ounce mason jar and screw the lid on tightly.
  2. Shake it up good! You'll want to shake the mason jar for about 5 minutes, until the cream thickens.
  3.  Pop it in the freezer for 3-4 hours and you’re good to go! 

If you don't enjoy your ice cream right after the 3-4 hour period, of if you store it back in the freezer to come back to later, it'll get pretty solid. You can just leave it sitting out at room temperature for about 10 minutes and then it should be the perfect, creamy texture!

Ingredients

Vanilla Ice Cream

  • 1 cup Heavy Whipping Cream
  • 2 tablespoons Powdered Sweetener
  • 1 teaspoon vanilla extract

Chocolate Ice Cream

  • 1 cup Heavy Whipping Cream
  • 2 tablespoons Powdered Sweetener
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Cocoa Powder

Strawberry Ice Cream

  • 1 cup Heavy Whipping Cream
  • 2 tablespoons Powdered Sweetener
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Freeze Dried Strawberries (Powder)

Instructions

  1. Add all ingredients to the mason jar and seal by screwing the lid on tightly.
  2. Shake mason jar for 5 minutes, or until the cream becomes thick and almost doubles in size. Unscrew cap and make sure the cream is thick and sturdy.
  3. Freeze for 3-4 hours and enjoy. You can scoop the ice cream out or enjoy it straight from the jar!

Notes

If the ice cream is too hard to scoop out after freezing, you can just leave it sitting out at room temperature for about 10 minutes. Then it should be the perfect, creamy texture!
