Bread.

One of the hardest foods to give up when going low carb/keto.

Some people miss the smell. For some it’s the texture. For most it’s the sweet, sweet taste.

While it normally doesn’t take long after going Keto for your body to stop craving bread all together, it’s a huge staple in most standard American diets.

Finding a delicious and filling replacement can be extremely helpful in sticking to your low carb lifestyle.

That’s where I come in today.

This recipe is amazingly simple to make, completely delicious, and very, very filling. This is the absolute best Keto bread recipe I’ve ever tried, so I’m especially proud to share it on the blog.

These Keto dinner rolls can be eaten by themselves, or used as anything from hamburger buns to mini pizza crusts!

What really made the difference for me was the type of almond flour I used. I’ve tried so many different brands, but I’m so happy with my new favorite (King Arthur Almond Flour).

It has an amazing flavor, and consistent pricing with all of the other brands.

This recipe is essentially a variation of Fat Head Dough, and there are a few other bloggers with similar, can’t-miss, bread replacement recipes:

What really helps to make them so filling is the ground flax seed in the recipe. This stuff is full of fiber, and it gives the rolls a really nice all around flavor.

Description

These are the best keto dinner rolls to help replace bread in your low carb lifestyle. This recipe is easy, filling, and delicious!

Ingredients

Scale

1 Cup Mozzarella, shredded

1 oz Cream Cheese

1 Cup Almond Flour

1/4 Cup Ground Flax Seed

1 egg

1/2 Tsp Baking Soda

Instructions

Preheat oven to 400

Line baking sheet with parchment, set aside

In a medium bowl, melt cream cheese and mozzarella together (microwave ~1 min)

Stir cheeses together until smooth, add egg and stir until combined

In separate bowl combine almond flour, ground flax seed and baking soda

Mix cheese and egg mixture into dry ingredients and stir until dough forms soft ball (it will be sticky)

Using wet hands, gently roll dough into 6 balls

Roll tops in sesame seeds if desired and place onto lined baking sheet

Bake for 10-12 minutes until golden brown

Let cool for 15 minutes

Notes

Coconut flour is NOT a direct substitute for almond flour, you must adjust the amount

Dough will be sticky but should be able to form balls. Use wet hands to roll balls. If absolutely too wet to mold then add an additional tbsp of almond flour until pliable

4 large rolls work great for sandwiches and burgers, 6 smaller is good for dinner rolls

I make these all the time. I’ve made them for a couple years now. I had to finally leave a comment. I love a good roll and these definitely rival a bread roll. My bf who is new to keto cannot stop raving about them.

These are very good! The flax seed really makes the roll feel and taste similar to a whole grain roll. This is a great base recipe that you could add all sorts of herbs and spices and even change up the cheese to customize for the occasion. I am thinking Italian herbs and adding some parmesan to the mozzarella to accompany zucchini lasagna.

You named this recipe well - they really are the best 😋 I recently went gluten free and have tried sooo many bread recipes and nothing was right. I followed your recipe exactly and I am overjoyed. This is the closest thing to a wholemeal roll that I have found but I prefer the taste. I would give you more than five stars if I could. Thank you so much for saving me time and money. I will be sticking with this recipe X

I never usually comment on recipes but after trying this last night I had to! I'd really been craving some bread this week, living in the UK means low carb bread options are very limited! I'd made three other keto 'bread' recipes this week with no joy, so tried this as a last ditch attempt to satisfy my cravings. WELL- i was overjoyed!!! These were actually what i was craving, after failed attempts at eggy, wet keto bread these were a crunchy delight! Thank you so much- finally a recipe that works!!
