Ingredients

Biscuits

3 cups finely ground almond flour

1 tablespoon baking powder (yes, a tablespoon)

1/4 teaspoon xanthan gum

1/2 teaspoon garlic powder

1/4 teaspoon salt

6 tablespoons butter, softened

2 eggs

Breakfast Sausage Gravy

1 pound ground breakfast sausage

2 tablespoons butter

2 ounces cream cheese

1/2 cup heavy whipping cream

1/2 cup chicken broth

1/4 teaspoon xanthan gum (to thicken)

1/2 teaspoon pepper

Instructions

Biscuits

Preheat oven to 400 degrees

In large bowl, mix all dry ingredients. Add butter and eggs and continue mixing until fully combined.

Line a large baking sheet with parchment. Separate dough into 10 balls and gently roll into slightly flattened discs.

Place on sheet and bake for 12-14 minutes until beginning to brown.

Let cool completely or they will fall apart.

Gravy

In skillet over medium heat, brown sausage until no pink remains.

Add butter to skillet. Break cream cheese into pieces and place into skillet. Mix until cream cheese is fully melted. 2-3 minutes.

Pour heavy cream and broth into pan. Sprinkle in xanthan gum and pepper and stir.

Heat to a low boil the turn off heat, continue to stir. This will allow xanthan gum time to thicken. Serve warm over biscuits.

 

 

Notes

Xanthan Gum can be found in the baking aisle of your local grocery store. Individual packets are usually less than $1 each.

You can make these biscuits with coconut flour, but I have not tried it and do not know the correct amounts.
